Weekend Highlights

  • After a phenomenal gym session on Friday after work, there is no better meal to make then homemade tacos - crispy (but not hard shell) tortillas, chicken poached with Pacifico beer and spicy chipotle rub, hot salsa, homemade guacamole (with avocados, cilantro, garlic, red onion, jalapeno, serrano peppers, salt, pepper and lime juice), Mexican shredded cheese, cilantro, and hot peppers. Served with a side of black beans cooked with chili powder, cayenne, and black pepper. Delish.

  • A day swimming and barbecuing in gorgeous weather. There is nothing more relaxing than falling asleep while floating on water.
  • Introducing B's dad to his first ever cookie cake. For a cookie fanatic, this was his dream cake.
  • Making homemade chili in the crock pot (I know, its more of a winter dish but sometimes you have a craving), along with mini cheddar bread bowls. I ofcourse made sure the chili was spicy with jalapenos, serrano peppers, hot sauce, cayenne and red pepper flakes. I also added some leftover yellow onion and bacon from breakfast. There is nothing more delicious than coming home to a meal that's been cooking all day without you being there.

  • Finally catching up on my movies - Labor Pains (don't judge, I proudly love ABC Family Movies), Seven Pounds (intense), and Watchmen (LOVED IT!!!!!!!).
  • Cooling down with homemade pina colada popsicles.
My weekend was perfectly low-key and just what I needed as the next two months are jam-packed with activities every weekend. Hope your weekend was as great as mine...

RYC: So the popsicles aren't working out? Bummer. I noticed that mine separated as well, with the cream rising to the top and the icier part settling near the bottom. But it sounds like yours are breaking apart when you try to unmold them.

1. I don't know how you're unmolding them, but maybe you're being a little too hard on them and that's why they're breaking off? Still if you've frozen them for 3-4 hours, they shouldn't do that.

2. Did you add the rum? Leave it out of the next batch and see if that helps.

3. Do you have large chunks of pineapple in your popsicles? I had a few small pieces left over and if the pieces are too large they might break where the larger pieces are hanging out. Puree it a little more and see if that helps.
