Bombay Potatoes and Egg

As we continue to clean out our pantry, freezer and fridge, my meals are getting weirder.  Honestly, there's no other way around it.  Tuesday night's dinner was no exception.

When I had to cook dinner on Tuesday night, I found a package of Tasty Bite Bombay Potatoes that Tasty Bite sent me back in September.  It was ridiculously hot in my kitchen and I decided to use this shortcut as the base of my meal to avoid any real cooking.



I took out a few pieces of the Tyson Grilled and Ready Chicken Breast Strips from the freezer and warmed them up on the stove.



When the chicken was warmed through, I added the package of Bombay potatoes to the pan.



I let all of these ingredients simmer while I quickly cooked up an egg to serve on top.


Like I said before, this was definitely a weird dinner.  While I actually don't mind eating Tasty Bite products as a quick shortcut for Indian food, nothing seems to be able to mask the processed flavor of the chicken breast strips.  The egg, however, was probably the best part of the dish.  After all, I love a good runny egg yolk, and serving the Bombay potatoes with an egg was definitely the right choice. 

I am definitely looking forward to cooking normal meals again once the packing, the moving, and the unpacking is over.  In the meantime, stay tuned for more weird meals from this half-packed kitchen!

I love weird meals, but not processed chicken. Blech! Good luck with the packing and unpacking!

You just gotta do it when cleaning out the pantry. I often have those boxed Indian dishes on hand for when I'm in a pinch. A few months ago I came back late on a Sunday after being away and one of those chickpea dishes was the perfect quick dinner.

HAHA! I actually really enjoy using random ingredients to make a meal. And the best is when it comes out tasting really good!

Definitely, weird, Michelle. Ha ha. I love how resourceful you are though. I tried to rearrange my pantry the other day and hate what I did... so now I feel like I have to eat things from it to clear space to reorganize it differently.

You know that a runny egg on top pretty much means I'd love this meal....regardless of how weird it is. ....It's like an Indian hash with eggs, rgith?

In my opinion - a fried, poached or boiled egg on top of anything is a good idea!

Having a few weird meals are definitely worth moving to a new home with a patio and big kitchen. Good luck!
